Friday's Special, April 26

Today's special will be from Spain, called Spanish Ratatouille . This is delicious recipe can be eaten during any time of the day, with your choice of a side dish. It is very popular and is especially like in Madrid. Ingredients: Olive oil 1 chopped onion 2 garlic cloves 2 green peppers, finely chopped 1 red pepper, finely chopped 2.5 pounds of ripe tomatoes 1 teaspoon of sugar 1 zucchini, peeled and diced salt and pepper fried eggs (optional) Manchego Cheese Directions: Add olive oil to a large saucepan.  Heat 2-3 tablespoons of olive oil over medium-low heat.  Add the onion, garlic, and peppers, and cook over medium-low heat, stirring occasionally, until browned (approximately 10 minutes). Add the crushed or fresh diced tomatoes to the pan with the peppers.  Add a pinch of sugar. Allow to simmer. White Bean Arugula Salad Prep time: 30 minutes Ingredients: 4 slices pancetta, chopped 2 tablespoons olive oil 1/4 cup chopped sweet onion 2/3 cup cherry tomatoes, halved 1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed 1/4 teaspoon salt 1/4 teaspoon pepper 2 cans (15 ounces each) cannellini beans, rinsed and drained 3 tablespoons red wine vinegar 4 fresh basil leaves, thinly sliced 2 cups torn fresh arugula or baby spinach 1/4 cup shaved Parmesan cheese  Directions: In a small skillet, cook pancetta over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. In same pan, heat oil and drippings over medium heat. Add onion; cook and stir 1-2 minutes or until tender. Ingredients: 2 tablespoons soy sauce 1 tablespoon dry sherry   1 dash sesame oil 2 tablespoons all-purpose flour 2 tablespoons cornstarch 2 tablespoons water 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1 teaspoon canola oil 4 (5 ounce) skinless, boneless chicken breast halves, cut into 1-inch cubes 1 quart vegetable oil for frying 1/2 cup water 1 cup chicken broth 1/4 cup distilled white vinegar 1/4 cup cornstarch 1 cup white sugar 2 tablespoons soy sauce 2 tablespoons sesame oil 1 teaspoon red chile paste (such as Thai Kitchen®) 1 clove garlic, minced 2 tablespoons toasted sesame seeds Directions: Combine the 2 tablespoons soy sauce, the dry sherry, dash of sesame oil, flour, 2 tablespoons cornstarch, 2 tablespoons water, baking powder, baking soda, and canola oil in a large bowl.  Mix well, stir  in the chicken. Here are some ideas for a breakfast meal for everyone! Pancakes: Ingredients 2 cups all purpose flour 1 cup milk 1 tsp. salt 1 tsp. vanilla 1 cup blueberries (optional) 1/4 cup vegetable oil or olive oil Directions: Combine all ingredients, mix until there is a thick liquid substance. If you wish to add more milk or water to make it more of a liquid substance you may.  Pour all blueberries into substance. Pour 1 tablespoon of oil or butter into skillet In a large pan or skillet, pour two scoops of batter with a small ladle into the pan to form a circle. If possible do this four times to form two circles of batter.  After 2 to 3 minutes or until brown, flip the pancake over so the other side can cook for the same amount of time, or until the other side is brown.  Repeat steps 5 and 6 until the batter is all used. Friday's special is from the United Kingdom. This recipe is very unique and perfect for a formal Friday evening dinner! The recipe is roast lamb with spring herb crumbs. Spring Herb Crumbs ingredients: 100g good-quality white bread 2 garlic cloves zest 1  lemon 1 tsp thyme leaf, chopped small bunch  parsley , chopped 3-4  anchovy  fillets, chopped (optional) Lamb instructions: 5  carrots , cut into chunks 2  onions , cut into chunks 4 bay leaves small bunch  rosemary 2 tbsp  olive oil large leg of  lamb , about 3kg/6lb 8 oz. Blueberry Sour Cream Coffee Cake Ingredients: 3 cups all purpose flour 3/4 cup butter 4 eggs 1 1/2 tsp. vanilla 3/4 tsp. baking soda 1/2 tsp. of salt 1 cup sour cream 1 cup sugar 3/4 tsp. baking powder 1/2 cup of coffee Filling: 2 cups of frozen blueberries 1 cup all-purpose flour 1/2 tsp. cinnamon 1/4 cup brown sugar Glaze: 1 cup confectioner sugar 2 to 3 tsp. of milk Directions: Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream, beating well after each addition. Spoon a third of the batter into a greased and floured 10-in. fluted tube pan. Combine brown sugar, flour and cinnamon; sprinkle half over batter. Top with half of the berries. Repeat layers. Egg Salad Sandwich Ingredients: 7 hard boiled eggs 1/2 cup mayonnaise 1 tsp. salt 1 tsp. pepper 1 finely chopped onion 1/2 cup celery  Directions:  In a small sauce pan, put one cup of water in a small sauce pan. Put the 7 eggs in water and bring to a boil. Boil water for 15 minutes. Drain out water and allow eggs to cool by rinsing them in cool water. Once they are cool peel hard shell off of eggs. Once the eggs are peeled finely dice all eggs In a mixing bowl, combine all ingredients that are listed above. On two slices of bread, spread egg salad on bread. Today's special is from France, called Steak Diane.  2 tbsp. canola oil 4. filet mignon steaks 1 1/2 cups beef stock 2 tbsp. unsalted butter 2 cloves garlic, minced 1 shallot, minced 1/4 cup brandy 1/4 cup heavy cream 1tbsp. Dijon mustard 1 tbsp. Worcestershire sauce 1/4 tsp. hot sauce 1 tbsp. minced parsley 1 tbsp. minced chives Kosher salt Pepper Directions:  Heat oil in a 12" skillet over medium-high heat. Season steaks with salt and pepper, and add to skillet; cook, turning once, until browned on both sides and cooked till desired, about 4 to 5 minutes for medium-rare.
